Workshop - Erase Your Fear of Budgets Forever & Become the Master of Your Profitability
Does the mere thought of writing a budget make your head spin and your heart beat with anxiety? You’re not alone. Most independent restaurant owners use their “gut” to budget their restaurants instead of the real numbers. But it’s not enough. Your budget is a guide to success. It points you to profitability. In this special three-hour session, David Scott Peters, restaurant coach and founder of TheRestaurantExpert.com, teaches restaurant owners how to build a budget the right way. In addition, he teaches attendees how to use the budget to be profitable, focusing on the most controllable number in the restaurant. Peters will teach attendees how to put systems in place to not only control this number, but reduce it and make money. As a bonus to attending this session, Peters will demonstrate budgeting with his Budget Creator Software, and everyone who attends will receive a free copy of the software. Attend this session to learn:
  • The steps to take to create a budget
  • How to use a budget to more easily recover from unexpected road blocks
  • How to use a budget variance report to maintain your budget
  • How to find and calculate the magic number and what makes it what it is
  • How to easily and quickly know where you stand financially
  • How to change your management team from a reactive style to a proactive one that gets you results
  • Fool-proof systems for reducing this key number and making you more money

Erik Shellenberger optimizes his client's presence where NEW customers are looking. People who are in unfamiliar territory or looking for something new do not use social media, they use Tripadvisor, Yelp, and Google almost exclusively. This session teaches restaurant and bar owners to think outside of the social media "fishbowl" of people who are already customers and into the "ocean" of new customers hoping to discover them.  If you are in a tourist economy this one's for you.

Understanding the Leasing Game & How to Get Ahead
This session focuses on providing a general overview of major commercial lease terms related to bars, restaurants and nightclubs – both small and large. How long should my lease be, how much should I pay, what if I have to change my concept, what if I have to sell my business, what am I responsible for fixing, what is the landlord responsible for fixing, and what if my business fails? These questions, and more, should all be addressed in your lease – and if you don’t know what to ask for, you end up in court wasting time and money down the line. Homan Taghdiri and Michael Tipps review the general terms you should be negotiating with your landlord, and leave some time for a Q&A session at the end for more specific questions/issues.

Music Licensing: Searching for Sense & Transparency
Bars and nightclubs support local artists and provide venues for live music, but to play music publicly, you need a license. For many bar owners, understanding music licensing can be an exercise in frustration. As Congress considers changes to music licensing laws, and the U.S. Department of Justice threatens to remove oversight of performing rights organizations, music licensees should be engaged in the debate about making music licensing easier and bringing transparency to the system.

Transforming Your Operation into a Destination
Retail is dying. Are bars facing the same plight? Andrew Chun of Sidecar Hospitality is focusing on building a sense of community and creating compelling reasons for patrons to leave their homes and spend time (and money) in bars. Making money in a saturated market like San Francisco, with its astronomical rent and $15 minimum wage, is no easy feat. "Good enough" is no longer an acceptable approach to the bar business. Sustainability in Bars 101
Saying so long to single-use plastic straws will be a long journey, but it’s really just the opening credits; now the real fun (and hard work) starts! While our industry’s collective awareness is UP, we must find ways to bring all of our waste streams DOWN. This session introduces you to how electricity, water, organics, agriculture, inorganics, and carbon footprint all have a role in getting greener behind the bar. It shows how to identify challenges specific to your location, but also how this awareness can be scaled up in local communities and even on a global scale. Lastly, it shows that addressing these sustainability issues can not only add up to a better future, but can add up to more money in your business.

The Importance of Your Entrance: How to Run It & the Art of the Jedi
The first impression your guests have is a psychological trigger that colors every aspect of their guests experience during their stay. Hosts and security personnel create your guests’ first impressions, before they get to see how beautiful your venue is, how good your food may be, or how tasty or creative your cocktails might be. Your staff in these positions are as important (if not more important), than many other positions in your venue, but often times the positions are filled with under-qualified, under-paid, and/or improperly trained personnel incapable of carrying out a very important purpose – to mold a positive and welcoming impression before anything else. This session discusses the importance of the initial impressions your “front of” front of house should be giving your guests, how they can attract new guests, and how to retain return guests. This session leaves time for an open format Q&A session at the end for more specific questions.
