Vice President of Culinary & Operations
As Vice President of Culinary and Operations for Walk-Ons Bistreaux & Bar, Michael leads all culinary operations, R&D, menu development, purchasing, cost controls and culinary training. This year, his team won Best Menu Line Extension at the National Restaurant Association’s Menu Masters and also MUFSO’s fourth annual Shake, Sparkle & Stir competition.

Michael has also spearheaded three new menu changes while dropping food cost and increasing overall food sales. Prior to Walk-On’s, Michael served as the Director of Culinary and Training for Copeland of New Orleans held various positions with the Cheesecake Factory. This included a position in the Middle East (including Kuwait City, Kuwait, Dubai, Saudi Arabia) as Senior Director of Culinary Operations, overseeing five restaurants.
